Bollinger Special Cuvee Champagne, Extremely fresh with an intense lime -lemon flavored palate the bubbles give a creamy texture and the yeast autolysis adds another dimension. The Special Cuvée is the purest expression of the Bollinger style, of its craftsmanship and its singular conception of what champagne should be.

It is therefore on this wine that the House of Bollinger shows how it is different from other Champagne Houses asserts its qualitative policy and by which it asks to be judged. Whether or not you particularly like the unmistakeable Bollinger style you have to respect it. Pinot noir (60 per cent) and pinot meunier (15 per cent) drive the wine augmented by fermentation in old oak barrels. The result is a complex spicy bready toasty baked apple bouquet the palate complete and round with an unexpected touch of delicacy and a pleasing dry finish. To enhance its unique style, bouquet and aromas, Special Cuvée is best served between 8 and 10°C. You can enjoy Special Cuvée right away, or choose to age it in your cellar.

 

Blend: 60% Pinot Noir, 25% Chardonnay, 15% Meunier. Over 85% Grands and Premiers crus. 

Maturation: cellar aged for more than twice the time required by the appellation. 

Dosage: moderate, 7 to 8 grammes per liter.

To the eye: a golden colour, distinctive of black grape varieties ; very fine bubbles. 

To the nose: a beautiful aromatic complexity ; ripe fruit and spicy aromas ; hints of roasted apples, apple compote and peaches. 

To the palate: a subtle combination of structure, length and vivacity ; bubbles like velvet ; pear, brioche and spicy aromas, notes of fresh walnut.

 

HISTORY

In 1911, Georges Bollinger’s British agent gave him the idea for the name Special Cuvée - “special” written the English way, without an accent. He thought the French expression “Brut sans année” was no match for such a subtle champagne… More than a hundred years later, the name of Bollinger’s key figure champagne still symbolizes both its expertise and its history.
