Vinification:
The Bergsig Estate Gewurztraminer is crafted from small berry, single vineyard grapes that are handpicked and carefully processed. The grapes are cooled to 8°C for extended skin contact, allowing for maximum flavor extraction. The free running juice is then tank fermented at 12 - 14°C, with fermentation stopped at the perfect moment to retain some residual sugar and enhance the overall flavor profile of the wine.
Terroir:
The Bergsig Estate is located in the upper slopes of the Breede River Valley, where it benefits from a unique Mediterranean climate with approximately 980mm of rainfall per year. The estate sits at a elevation of 240 – 350m above sea level, resulting in cold winters with late snowfall and low spring temperatures that slow ripening. Due to these conditions, the harvest typically begins 2 – 3 weeks later than other wine regions.
The soil composition of the estate is diverse, with hills composed of weathered sandstone and valley floors sedimented with a variety of soil parent materials. The Worcester Fault, a major geological fault, runs through the valley, contributing to the unique terroir of the region. The significant temperature variation, with warm days and cool nights, ensures good sugar development in the grapes, while preserving the natural balance of acids.
