Vinification:
The grapes for this wine were sourced from two separate vineyards, each contributing unique flavors to the final blend. Fruit from the vineyard near the White River lends riper tropical notes, while grapes from higher mountain slopes add a more delicate fruitiness. Hand-picked in the early morning to preserve freshness, the grapes underwent skin contact before settling and cold fermentation in stainless steel tanks.

Terroir:
Bergsig Estate benefits from a Mediterranean climate with an annual rainfall of approximately 1000mm. Situated on the upper slopes of the Breede River Valley at 240-350m above sea level, the estate experiences cold winters with snow into late Spring, leading to slow ripening of the grapes. Harvest typically begins 2-3 weeks later than other regions, allowing for optimal flavor development. The unique geology of the region, marked by the Worcester Fault, results in diverse soil types that contribute to the wine's complexity. Diurnal temperature variations further enhance flavor development, with warm days and cool nights preserving natural acidity in the grapes.
